Braised Stuffed Artichokes


Artichokes are great for a first course. They a gorgeous, delicious and they can take a while to eat.


Serves 4

Points per serving: 2


4 Medium Artichokes

2 oz Croutons

2 Cups Chicken Broth

1/3 cup + 2tsp Lemon Juice

1/4 cup chopped Parsley

2 Garlic cloves minced


With a large knife cut off the stem end of each artichoke flush with the base so it will stand upright. Remove and discard center leaves and choke. Trim with scissors 1inch from the top of each leaf.

Grind croutons into coarse crumbs.

Preheat oven to 400

In a medium bowl combine crouton crumbs 1/2 of the chicken broth, 2 Tbsp Lemon Juice, parsley and garlic mix well.

Spoon 1/4 of the mixture in to each artichoke

In a large skillet combine the remaining chicken broth and lemon juice. Bring to a simmer and remove from heat. Arrange artichokes upright in skillet, cover with foil and bake 40-45min

serve by spooning pan juices over each artichoke.
